Ingredients:

- 1 tbsp olive oil

- 1 large onion, finely chopped

- 2 cloves garlic, minced

- 4 large potatoes, peeled and diced

- 6 cups vegetable broth

- 1 bunch kale, finely chopped

- Salt and pepper to taste

- Optional: vegan chorizo slices for garnish

 

Instructions:

1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until the onion is translucent.

2. Add the diced potatoes and vegetable broth. Bring to a boil, then reduce the heat and let it simmer until the potatoes are tender.
