Vegan Imam Bayıldı 🍆 (Stuffed Eggplant)

 

Ingredients:

- 2 large eggplants

- 1 onion, thinly sliced

- 3 cloves garlic, minced

- 2 tomatoes, chopped

- 1/4 cup olive oil

- 1/2 cup chopped parsley

- Salt and pepper to taste

- 1 tsp sugar

- Juice of 1 lemon

 

Instructions:

1. Preheat your oven to 375°F (190°C).

2. Cut the eggplants in half lengthwise and scoop out some of the flesh to create a cavity for the filling.

3. Heat olive oil in a pan and sauté the onions and garlic until soft.

4. Add the tomatoes, eggplant flesh, sugar, salt, and pepper. Cook until the mixture is well combined and the tomatoes are soft.
