- 1 small green bell pepper, diced

- 1/2 cup mushrooms, sliced

- 1/2 teaspoon turmeric (for color)

- 1/2 teaspoon black salt (kala namak) for eggy flavor (optional)

- 1 tablespoon nutritional yeast

- Salt & pepper to taste

- Vegan cheddar cheese (optional)

- Fresh chives for garnish

 

Instructions:

1. Heat olive oil in a pan over medium heat. Add the diced onion and bell pepper, and sauté until soft, about 5 minutes.

2. Add the sliced mushrooms and cook for another 3-4 minutes until the mushrooms are browned.

3. Crumble the tofu into the pan, stirring to combine with the veggies. Add the turmeric for a bright yellow color, black salt for that eggy flavor, and nutritional yeast for a cheesy kick.

4. Season with salt and pepper to taste. If you want an extra indulgence, sprinkle some vegan cheddar on top and let it melt.

5. Cook for about 5-7 minutes, stirring occasionally, until the tofu has absorbed the flavors and is slightly crispy.

6. Garnish with fresh chives and serve with toast or avocado for the perfect breakfast!
