It’s challenge time, #Loversโค๏ธ๐ฅ! Ready to cook up some island flavors at home? Let’s try a Trinidadian recipe together. Get your aprons on, here’s a delicious Vegan Mango Chutney Curry recipe for you to try:
๐ Vegan Mango Chutney Curry Recipe ๐
Ingredients:
- 2 ripe mangoes ๐ฅญ, peeled, diced, and save the seed!
- 1 onion, chopped ๐ง
- 2 cloves garlic, minced ๐ง
- 1 tbsp fresh ginger, grated
- 1 tbsp curry powder ๐ถ๏ธ
- 1 can coconut milk ๐ฅฅ
- 1 tbsp tamarind paste
- 1 tsp cumin seeds
- Salt and pepper to taste
- Fresh cilantro for garnish ๐ฟ
Instructions:
1. Heat oil in a pan and sauté the cumin seeds until they release their aroma.
2. Add chopped onions, garlic, and ginger. Cook until the onions are soft and golden.
3. Stir in the curry powder and cook for another minute.
4. Add diced mangoes and coconut milk. Toss in the mango seed as well, this will help thicken the sauce and intensify the mango flavor! ๐
5. Add tamarind paste, salt, and pepper, and let the curry simmer for 15 minutes.
